Instructions
Prepare the Chicken Masala

Heat oil in a large pot.

Add sliced onions and fry until golden brown.

Add ginger garlic paste and cook for 1 minute.

Add tomatoes and cook until soft.

Add yogurt, red chili powder, turmeric, coriander powder, cumin powder, garam masala, and salt.

Cook until oil separates.

Add chicken and cook for 15-20 minutes until tender.

Add green chilies, coriander, and mint.

Set aside.
Cook the Rice

Wash and soak rice for 30 minutes.

Boil water with bay leaves, cardamom, cloves, cinnamon, and salt.

Add rice and cook until 70% done.

Drain immediately.
Assemble the Biryani

Spread half the rice over the chicken layer.

Add fried onions, mint, coriander, and saffron milk.

Add remaining rice.

Top with butter.

Cover and cook on low heat for 20 minutes.
Add the Cheese Topping

Transfer biryani to an oven-safe dish if necessary.

Bake at 200°C (390°F) for 8-10 minutes until melted and golden.

Chicken
Bone-in chicken provides the best flavor, but boneless chicken thighs can also be used.
Cheese
Mozzarella gives the perfect stretch while cheddar adds extra flavor. You can use pizza cheese blend as well.
Rice
Always use aged basmati rice for long fluffy grains.
Yogurt
Full-fat yogurt gives a richer texture.
Spice Level
Reduce green chilies and red chili powder for a milder version suitable for children.
Halal Option
All ingredients are naturally halal. Ensure packaged cheese contains halal-certified enzymes if required.
