- Mastering the Rice Texture: The biggest secret to a non-sticky, restaurant-style biryani is parboiling the rice to exactly 80–90% completion. The grain should still have a slight bite (a firm core) in the center when you press it between your fingers. It will finish cooking perfectly during the 20-minute dum (steaming) process without turning mushy.
- The "Salty Sea" Rice Water: When boiling your rice, make sure to add enough salt to the water so that it tastes like sea water. Most of this salt drains away with the water, but it ensures the rice grains themselves are perfectly seasoned from the inside out before meeting the gravy.
- Choosing the Right Meat Cuts: For the juiciest results, use a mix of bone-in mutton pieces (like the shoulder or leg). The marrow and bones enrich the gravy with incredible depth of flavor that boneless meat simply cannot replicate.
- Achieving the Perfect Dum: To ensure no steam escapes during the final layering stage, you can seal the rim of your pot with a thick layer of aluminum foil before placing the heavy lid on top. Alternatively, place a heavy weight (like a mortar and pestle or a heavy pan) on top of the lid to trap all the aromatic steam inside.
- Resting Time: Once the 20-minute steaming process is complete, turn off the heat but do not open the lid immediately. Let the pot sit undisturbed for another 5–10 minutes. This allows the heat to redistribute and helps the rice grains firm up slightly so they don't break when you fluff and scoop the biryani out.
